I spotted this Lobster mushroom on a walk recently near Kootenay Lake, B.C. Here's some interesting information from Lobster-Mushrooms.com website: "Lobster Mushrooms are beautiful white mushrooms with bright red skin, firm flesh and a mild seafood-like flavor. The red skin makes them resemble seafood, hence the name Lobster Mushroom. If you want the details....Lobster Mushrooms are actually a symbiotic relationship between a red fungus and certain types of edible mushrooms. The fungus grows on the mushrooms, changing their skin color, their shape, and also their flavor. As an example, lobster mushrooms can have a peppery flavor if the host mushroom is a particular variety. This mushroom is usually too hot for most people's taste, but the fungus mellows the heat of the mushroom and makes it more palatable. The fungus seems to enhance the flavor of the lobster mushrooms it inhabits.

Lobster Mushrooms make a great meat or seafood substitute for vegetarians and vegans. They stir...
